We’ve been on somewhat of a Romuald Valot kick this fall/winter, and for good reason! This is a Burgundy producer who simply never misses with his old-school style of farming and vinification, and crystalline focus on authenticity of terroir. His choices come from firsthand experience watching other, big-name Burgundy producers chemically manipulate and cover up their wines to make them consistent and, we’ll say it, boringly predictable... and he wanted nothing to do with that methodology. After some time spent in Beaujolais honing his craft and growing his land holdings, he returned to Burgundy with an invigorated commitment to purity, sustainability, and expression of terroir, and has yet to slow down.

This Premier Cru Red Burgundy comes from just south of the famed village of Pommard, from a single plot tucked right between the legendary Rugiens-Bas and Les Croix Noires climats. The tiny seven-acre plot has become a favorite for wineries like Albert Bichot, Olivier Leflaive, Pierre Girardin, Bouchard Pere et Fils, and now Romuald Valot! Pretty excellent company, if you ask us. The slopes are gentle and the vines – planted exclusively to Pinot Noir – face east and a little south.

This has just everything you love about Pommard... power, warmth, structure, and those sublime plums! It opens with bright cherries, dried rose, cedar, star anise, and clove, followed by divine dried porcini mushrooms, red plums, raspberry coulis, and a final breath of cooling mint. The finish brings an iron and earthy minerality softly wrapped in a sweet vanilla hug of French oak. It’s a wine that could easily be mistaken for Grand Cru Burgundy, and will age for decades in the same fashion! For over $150 off, this is simply one of the BEST Burgundies for the price in the States today. Do not miss out!

PAIRING IDEAS: Mix things up with a large pork shoulder roast with cilantro-citrus adobo sauce... the juicy meat and bright-toned sauce will absolutely melt your mind with this brilliant Burgundy.
