From the Valliant Vineyards in California’s Central Coast, this Pinot Noir is a blend of Dijon clones 115, 777 and 828. Vinified in separate lots, the fruit was gently crushed and de-stemmed, then fermented with native yeasts in open-top tanks. After pressing, the wine was aged for 10 months in French oak barrels. It strikes a fine balance between bold dark fruit and elegant structure, with tart red and black berry notes, spiced plum, and fragrant wild herbs—sage, sage oil and wild thyme. Flinty mineral and crushed slate character frame a rich tapestry of tannins, culminating in a finish of notable length and poised tension.
