Guillaume Gilles came up working for Jean-Louis Chave and Robert Michel, the legendary old-school Cornas producer who also mentored Thierry Allemand, and when Michel retired after the 2006 vintage he did Gilles the considerable favor of leasing him his prime parcel in Chaillot and sharing his cave along with all its secrets. That pedigree shows in everything Gilles makes: 100% Syrah from granite terraces, never destemmed, long cuvaison, aged 18 months in old demi-muids, bottled unfined and unfiltered. Even Allemand, who is not known for freely dispensing compliments, told Vinous that Gilles is “one of the best vineyard workers in Cornas and will be one of the best of the appellation before too long.” The flagship Cornas blends three separate parcels within Chaillot, planted between the 1950s and 1970s: Combe de Chaillot for fruit, Les Terrasses for granitic punch and intense spice, and Grandes Mures for dark-fruited depth and structure. The 2022 vintage shows the inky, bone-crushing side of Cornas that great years from this appellation produce: black minerality, saturating dark fruit, peppery spice and garrigue, with the brooding, austere character of a wine that wants at least five years in the cellar before it even begins to open. Tiny production, extraordinary pedigree. This is the real deal. Grab it now.

About The Producer

The lineage here matters. Guillaume Gilles grew up with his grandfather’s vines in the Les Peyrouses sector of Cornas already in his blood, took over that half-hectare of family land as a young man, and then spent the early 2000s doing exactly what any serious Cornas student should do: apprenticing with Jean-Louis Chave in Hermitage and Robert Michel in Cornas, the two figures who defined old-school Northern Rhône winemaking for a generation. When Michel retired after the 2006 vintage, he handed Gilles the keys to two things that money can’t easily buy: his prime Chaillot parcel, the source of Michel’s legendary Cuvée des Coteaux, and his ancient underground cellar in the heart of the village. Gilles founded his own domaine in 2007, and in the years since has expanded to roughly 5 hectares across Cornas, Saint-Péray, and the Doux valley, all farmed entirely by hand and horse with certified organic status since 2020. The approach in the cellar is as traditional as the mentors who shaped him: whole-cluster fermentation in concrete vats with native yeasts, macerations of at least three weeks, aging in old foudres and large-format barrels (only around 10% new wood), and no fining or filtration before bottling. In 2010 he purchased a hectare of land at 450 meters in Les Rieux, above the natural amphitheater of Cornas, planting it on white granite soils that had never previously been cultivated because of ripening concerns. That experiment became the Nouvelle R bottling, a fresher, more mineral-driven expression of Cornas that sits alongside his powerful, brooding Chaillot as evidence of everything this appellation can be in the right hands. Thierry Allemand, whose own opinion of Cornas producers carries more weight than perhaps anyone’s, has called Gilles one of the best vineyard workers in the appellation. That is not a compliment he hands out lightly.
