When Champagne was decimated by phylloxera in the late 1800s, the Dechelle family just so happened to be some of the region’s most respected vine grafters. That kept them supremely busy for the next couple of decades, and they helped to replant much of the surrounding area with new vines – essentially saving Champagne – so, without a doubt, this family has reached legendary hero-status in more ways than one. They only recently decided to try their hand at making wines instead of just growing the grapes for them, and the results have been tremendous.

Champagne Phillipe Dechelle farms their 9 hectares in the gorgeous Vallée de la Marne using organic methods, and all their efforts are proudly displayed through their tremendously healthy grapes, generating some serious intensity in their cuvées. It’s rich, creamy, and all too approachable, but with a zesty, laser-focused edge that will delight any of our most serious bubbles lovers out there. The flavors burst out the glass with the essence of white truffles, followed by this crunchy chalk and slate experience, then Fuyu persimmons, toasted almonds, and percolating red fruit notes – cherries, pomegranates, plums, and tart cranberries... absolutely stunning! Three years aging gives this a nice roundness, but Champagne’s unmatched, terroir-driven acidity keeps it dry and tantalizingly fresh.

We’re always on the lookout for great new Champagne – especially as the prices around the world have crept up steadily over the past few years – and we were thrilled to have this one come onto our radar! This is bound to fly, and we’re not sure when we’ll have access to a restock, so make your moves accordingly!

PAIRING IDEAS: Upgrade your fried chicken and Champagne game with the addition of caviar. Garnish the fried chicken with caviar right before serving for an incredible explosion of flavors and textures alongside this boisterous Champagne.

About The Producer

This Champagne house crafts its cuvée by blending the classic trio — Pinot Noir, Pinot Meunier, and Chardonnay — each year into a non-vintage expression designed for consistency and balance. Their approach combines Champagne tradition with a steady vision: a harmonious Brut that delivers classic notes of brioche, toast, orchard fruit, and minerality — elegant and approachable, ideal as an aperitif or celebration wine. In its current state, the house continues producing under that blend philosophy, offering quality Champagne that embodies refined style and thoughtful assemblage without chasing prestige alone.
