- Méthode traditionnelle: primary fermentation in stainless steel, followed by secondary fermentation in bottle. Gently pressed with a pneumatic press, with the free-run juice fermented separately from the must. The must is left to clarify for at least 24 hours to enhance its aromatic delicacy before beginning fermentation. Alcoholic fermentation is stopped after 6 months by chilling the wine to retain some natural residual sugar.
