OK, here's your wildcard – and it might just become your new obsession. Bodega Hermanos Mesa is a family estate on the slopes of Tenerife, farming 60-to-80-year-old Listán Blanco vines at a jaw-dropping 1,300 meters above sea level in the dramatically poor, rocky soils of the Valle de Güímar (the name "Los Pelados" literally means "the bare ones" – a nod to the stony, stripped landscape). The wine is fermented with indigenous yeasts in used 500-liter French oak and possesses a salinity and visceral mineral intensity unlike just about anything else you'll taste this summer. Think salted Meyer lemon, crunchy green pear, exotic fruit, and a bone-dry snap of iodine minerality that resets your palate and leaves you immediately reaching for another sip. Volcanic wine lovers, this is your moment.
