Bibi Graetz’s wines are built from fragments of extraordinary old vineyards scattered across steep hillsides and remote coastal islands, places where vines struggle, yields are tiny, and character is everything. The result is wines of striking intensity and finesse, with an unshakable sense of risk and freedom in every bottle. These wines provoke emotion rather than follow rules, marrying age-old tradition with bold creativity in every bottle, and earning this “crazy head” a cult following around the world.
Bibi is a painter-turned-vigneron whose estate sits perched high on the hills above Florence in Tuscany. He’s masterfully transformed his passion for old vines into internationally acclaimed wines since his first vintage in 2000. From the start, it’s been a winery that feels less like a traditional Tuscan estate and more like a creative force, capturing the wild and soulful side of Tuscany rather than its more polished clichés.
This bottle holds Tuscany’s most precious plots of old-vine Sangiovese – some vines stretching as old as 135 years – and Bibi calls this 2021 his “dream wine.” It’s a downright stunning expression of some of Italy’s oldest vines, with the depth and concentration that made 2021’s harvest one of the greatest of all time for the region. The fruit was gently fermented and pressed, aged in 100% neutral barriques and casks, and strenuously selected to make sure only the most polished fruit made it to the final blending and bottling stage.
With 100 points – and THREE 99 pointers – this is absolutely, hands-down, one of the greatest Tuscan reds you’ll ever taste. The floral perfume opens with dusty plum, warm Tuscan baked earth, with sage-scrub herbs of lavender, nepitella, and wild fennel, before enveloping the mouth in sanguine minerality and rooibos tea accents alongside red cherry, pomegranate, crumbly shortbread, and some salty sea air seasoning. Beautifully intricate, extraordinarily complex – it carries the sort of purity and linear intensity that will allow it to age brilliantly for at least another 30 years! The texture is liquid cashmere, the structure impressively rigid, yet intricately woven – and although it isn’t as overt and fruit-forward as past iterations, it’s still full of elegance and hidden power. Fantastic now – even better with time. If you can, bring home two for extra savings and free shipping! It’s absolutely worth your time and investment for one of the finest bottles in all of Italy, and indeed, the world, too!
PAIRING IDEAS: Go fresh and simple to allow this exceptional Toscana to shine all on its own – a fresh, easy, breezy spaghettini al pomodoro fresco (classic Italian pasta with fresh tomato sauce) will send your taste buds STRAIGHT to the moon.
