Junmai Daigingo is the top level of premium sake, as defined by the rice milling rate, aka Seimaibuai. These sakes will have a Seimaibuai level of 50% or lower, meaning that at least 50% of the rice is polished away in the brewing process. They also have no distilled alcohol added, unlike some lower-quality sakes. Oftentimes, the most prominent aromas and flavors in Junmai Daigingo sake will lean fruity, particularly big apple, banana, and melon aromas, with mineral and acidic undertones. Served chilled, you can drink these on their own or with an assortment of appetizers, seafood, and salty fare (fried chicken, anyone?).
