When we heard a small allotment of the 2015 Dom Pérignon came available, we jumped on it. Last time we offered some of this, y’all scooped it up in record time, and we are thrilled to have a mere 20 cases to bring to you again today. Benedictine monk Dom Pierre Pérignon remains a righteous historical figure in Champagne’s rise to eternal popularity, and as mega-fans of exceptional Champagne, we are perpetually tipping our hats to him. As the first to blend different base wines for complexity and harmony, he also initiated the use of cork tree closures on bottles, as well as optimized the method to bottle up bubbly and keep it, well, bubbly. While the first vintage of Dom Pérignon wasn’t released until 1921, 200-plus years after his death, he’s still credited as being a trailblazer in winemaking during his time, and we are forever indebted to his successes.

Ultimately, the balmy nature of the year staved off disease and rot, and resulted in a boisterous crop of well-balanced, flavor-packed grapes. Composed of 51% Pinot Noir and the rest Chardonnay, with a dosage of low, Extra Brut-worthy 4.5 grams per liter, the 2015 vintage has a calm strength to it, with a simultaneously powerful tactile presence and exceptional aromatic richness. Open it up to a thrilling perfume of lemon zest, cantaloupe, yellow peach, and orange blossoms, with the after-notes of buttery, oven-fresh croissants, wet stones, and white pepper. Melting with charm and elegance, the palate continues the ride of ripe fruits – melons, mandarins, apricots, and a drip of grapefruit – and then teasing out a lengthy finish of fresh herbs, toasted brioche, candied ginger, some chalky gravel, and a light touch of that signature Dom Pérignon smokiness. The complexities are windingly scrumptious, though its delicate, earthy freshness will leave you ravenous for another glass. It’s clear, they’re the best for good reason – at 97 points and 42% off, it would be a sad oversight to not make this yours and try some for yourself!

PAIRING IDEAS: You gotta go oysters here – we’re opting for some local Hog Island Sweetwaters with a cucumber mignonette and, of course, a fat squeeze of fresh lemon.
