If you’re anything like us, you can’t get enough of Romuald Valot. This is a producer who never misses – rooted in old-school farming, hands-off winemaking, and an uncompromising commitment to true terroir expression. After witnessing big-name Burgundy houses lean on shortcuts to iron out personality in favor of consistency (and, frankly, predictability), Valot chose a different path. Time in Beaujolais sharpened his instincts and expanded his holdings, and when he returned to Burgundy, it was with renewed focus: purity, sustainability, and wines that speak clearly of place. He hasn’t looked back since.

He has carefully selected vineyards with character to showcase the very best expressions of the land – and then farms them organically with great care. This En Largiliere site – a four-hectare Premier Cru vineyard in a prime spot in northeastern Pommard, above Les Grands Epenots on the slope – has excellent exposure and heavy clay-limestone soils that result in dense, structured, and somewhat more rustic wines with high fruit concentration and superb aging potential.

Brooding aromas of blood orange, black currant, pepper, and cumin begin the adventure, followed up by bramble fruit such as raspberries and blackberries – all amplified by mouthwatering savory elements like fennel, baby bella mushrooms, and cured meat. It’s wonderfully old-school Burgundy built for the long haul, but with a pop of acidic freshness that awakens gloriously with a bit of air.
