Coming from what may be the most iconic producer in all of Italy, this revered 98-point Cervaro Della Sala is a collectible white wine that is worthy of a spot in any Italian wine lover’s collection! We have very limited numbers, so don’t hesitate to make this “Montrachet of Italy” the newest star in your cellar! 95% Chardonnay and 5% of the local Grechetto grape make for a stunningly complex wine.

The Antinori family has made wine in the picturesque rolling hills of Tuscany for nearly 700 years. Cervaro della Sala is the family’s top white wine offering, with the 2022 vintage composed mostly of Chardonnay, with a 5% splash of the native Grechetto grape. It’s called Cervaro after the noble family that owned Castello della Sala in the 14th century, and has been in production since the 1985 production.

The 2022 season was warm and dry, with a few bouts of rain that allowed the grapes to reach optimal ripeness and health, with a strong aromatic profile, incredible balance, and generous fruit characteristics. Castello della Sala is in the Umbria region, near the Tuscan border, with a medieval castle on the property surrounded by vineyards on gently rolling hillsides. It’s the ideal place for growing white wine grapes, with rich clay and calcareous soils peppered with fossil shells, along with a great diurnal climate and ample sun exposure.

The wine is vinified using a gravity flow system, allowing the grapes to be processed as gently as possible without the use of mechanical pumps. This was also one of the first Italian wines to have malolactic fermentation and aging in barriques, giving the wine a creamy, vanilla-kissed warmth that complements its acid structure impeccably. The nose opens with a subtle matchstick smokiness, with some grilled pineapple, cedar bark, and raw almond entering prominently, while the palate brings in more yellow fruits of Golden Delicious apple, lemon meringue pie, and golden peaches, plus accents of vanilla bean, custard, saltines, and mint. This is full-bodied and rich, with ample layers, loads of character, and a remarkably expansive finish. The critics will encourage you to age it, but we say enjoy the best of both worlds by securing some for now, some for later! 

PAIRING IDEAS: This begs for some citrus – and we’re whipping up a simple Pasta al Limon (aka, lemon pasta) with some freshly grated Parmesan and herbs on top!

The Antinori family of Florence, one of the world's oldest and most distinguished wine producers, has lived in Tuscany since the 14th century and celebrated its 635th anniversary as wine makers in 2020. The current company president, Marchese Piero Antinori, believes in the tradition that the primary role of wine is to accompany food and enhance the dining experience.
