Bibi Graetz is the hottest producer in Tuscany, with his “Testamatta” bottling turning the Tuscan wine biz upside down soon after the first release in the early 2000s. Now, the world is really taking notice of “Colore” – his flagship wine taken from his very best plots in Tuscany. 95 points is an amazing score – but really, it is the development of this wine over a decade plus that is the star here...a truly remarkable bottle that is tasting better than ever right now!
Perfect provenance too, as it came direct from the winery to our cool room… just doesn’t get any better! Colore is a near equal parts blend of sangiovese, canaiolo, and colorino. One of those grapes you are likely to know quite well, but the others are somewhat obscure these days in Tuscany. Taken from the very best barrels and plots, and his oldest, highest elevation vines – Bibi crafted only about 400 cases of this wine, and only 100 made it overseas. 70-90+ year old vines make up the majority of this cuvee, from three separate vineyards – Lamole, Vincigliata, and Siena.
Beautifully intricate and layered, with supremely elegant aromatics that hover on the sublime – red currants, pine forest, white truffles, wild berries, toasted spice box, black cherries, polished leather, fresh-turned earth, graphite, iron ore, dried roses...it simply goes on and one! This is something truly special and unique...if you love Tuscany, this is an absolute must. ELEVEN YEARS YOUNG and absolutely singing right now...this is a treat for hundreds of dollars below retail. Do not miss out!
PAIRING IDEAS: My local butcher had a great price on pheasant...which I almost never see outside of restaurants. Roasted with salt and pepper, plus tons of fresh herbs, then served with an onion soubise and roasted oyster mushrooms...simply divine!
