Callot's NV Le Chemin de Paradis Grand Cru is terrific. This is an especially bright, tightly wound expression of Avize. Even so, there is fabulous depth, persistence and raw power in the glass. Yellow orchard fruit, chamomile and apricot flesh out as this vinous, authoritative Champagne shows off its personality. The low-ish feeling dosage seems to really amp up the flavors here. Disgorged: February 2017. Dosage is 6.5 grams per liter.

Farming grapes in the region since 1784, the modern story begins in 1955 when Pierre Callot decided to bottle his own wine from his best plots in Avize, Cramant and Chouilly. Pierre purchased the old Piper Heidsieck house and vineyard buildings in 1971 when he began to run out of space and the rest is history.

 

This really is an incredible wine and a screaming deal. Wildly complex, laser focused, MASCULINE Grand Cru Champagne just singing with stone fruit, brilliant minerality and subtle herbs. About the Producer

The history started in 1784 when Louis Callot was born in Avize and six generations have been farming vineyards there since. IN 1955 Pierre Callot decided to bottle his own wine from his best plots in Avize, Cramant and Chouilly. Pierre purchased the old Piper Heidsieck house and vineyard buildings in 1971 when he began to run out of space and the rest is history. Today Pierre’s youngest son Thierry is carrying on his legacy and running the family business.
